Coconut tree is being called as the “Kalpavriksha” meaning a source of bounty for the grower given the potential for an economic benefit coming from practically all parts of the plant. The fruit of the coconut tree yields coconut flesh or kernel, coconut water, coconut shell and coconut husk, coconut flower yields palm wine etc. Southern parts of India covering Karnataka, Kerala and Tamil Nadu, where coconut grown predominantly, focus has been mostly on the conversion of the coconut kernel into copra for coconut oil production and conversion of coconut husk into coir fiber for use in a variety of coir products. Traditionally the country has a lot of direct uses for coconuts in culinary applications, especially in areas where coconut cultivation has been widespread.
